Campfire Homefries

Potatoes are a fantastic side to any dish, whether it be breakfast, lunch, or dinner. Homefries are a great way to cook them too–plus, homefries can be used for any meal too despite the standard for breakfast! Just as tasty as roasted potatoes, home fries are the perfect starch to add to your meal. 

The best homefries are made from pre-cooked potatoes. They can be leftover baked potatoes (a fantastic way to use them!) or boiled/steamed specifically for the dish. Whichever you choose, allow your potatoes to cool overnight before you cut them. This will help them cut easier and allow them to get a crisper edge! 

While you can make these over your campfire in a cast iron pan, if you make them in a foil packet, you can cook the rest of your breakfast at the same time!

Canola Oil

Salt and Pepper (or Seasoned Salt!!)

Any other spices you want to add

Tongs

After you cut up your potatoes, toss them generously in oil and the salt and pepper. Use whatever spices you want such as garlic powder, onion powder, Italian seasoning, Cajun seasoning–whatever you prefer! Each packet can be different. 

Place the potatoes in the center of the foil and add a little extra oil. Fold over to create a pocket and fold the sides in several times. Leave some room for steam, ensure it’s tight enough to not leak any oil.

Place the foil packets in the fire and carefully turn every 5 minutes until they are done and crispy–about 20 minutes total. Remove from fire and serve!
