Easy Cajun Pulled Pork Tacos

Switch up your taco game tonight with these super delicious Cajun pulled pork tacos! The meat is tender and spicy and the pickled vegetables give an excellent crunch and sourness that complements the heat like you would not believe! Don’t forget the cilantro aioli to really make your taste buds explode! 

Remember, because this is pulled pork, this is a dish that you need to start in the morning so it has all day to cook and get tender!

Cajun Pulled Pork

Ingredients: 

Cajun spice mix

Pork shoulder or butt

6 oz Crushed pineapple 

¾ c Orange juice

Using the cajun spice mix found here, rub your pork shoulder or butt down with the spice. Make sure to really get it all covered in all of the little creases and crevices of the pork.

Place in the crockpot and add crushed pineapple and orange juice. Sprinkle a little extra cajun spice on top and turn the crockpot on high for at least 6 hours or until the pork shreds.

While your meat is cooking, you can make the pickled vegetable slaw using this recipe. 

These tacos are best with flour tortillas, or a corn and flour tortilla hybrid.

Start by layering some cheese on the bottom–cheddar or a queso fresca would be the best! Then, layer the hot meat on top. If you put the cheese on the bottom, it lets it get nice and melty! Next, top with some of the pickled slaw and some of the cilantro aioli (recipe below)
