One Pot Meals: Campfire Brisket

One pot meals are always one of my favorite ways to cook. They’re easy to make and to clean up! You just can’t go wrong. And, if you can make it over your campfire, what an even bigger bonus!

Brisket usually takes a while to cook, which is fine! Just make sure your fire is going all day and you’ll have perfect, fork-tender brisket with potatoes, carrots, and onion just in time for dinner!

Campfire Brisket

Ingredients:

1 brisket, sized to feed your family

3 lbs potatoes, chunked (any kind will do!)

1 medium onion, chunked

4 carrots, peeled and chunked

4 c beef broth

½ cup red wine

2 bay leaves

Salt and pepper to taste

Equipment:

Grill Grate

Large cast iron pot

Foil

Generously salt and pepper your brisket. Allow the grill to get hot and then char your brisket. Set aside. Warm the cast iron pan and place the brisket in with the onions, potatoes, and carrots surrounding it. Add your wine, broth and bay leaves. Cover with foil and cook for approximately 4-6 hours or until the brisket is tender.
